Perfect boning

The PRO Boning 16 cm from the EKA Butcher PRO series is a robust knife with a slightly curved blade designed to follow the bone and clean it in just a few strokes. It is the boning knife to always keep at hand, whether in the butcher shop or in the kitchen.

Compared to the 13 cm version, it offers more cutting length for large cuts, such as ungulate legs and shoulders.

The blade is made of Sandvik 12C27 stainless steel, which is distinguished by its long-lasting edge retention. The handle is made of Santoprene™, a material approved for food contact and known for its secure grip even with wet or greasy hands.

If you are looking for a more compact boning knife, there is the PRO Boning 13 cm; for heavier tasks, the PRO Reinforced Boning 15 cm.

Sandvik 12C27 steel

12C27 is the Swedish steel used for most EKA knives, now produced by Alleima (formerly Sandvik). Hardened to 57–59 HRC, it is razor-sharp, corrosion-resistant, and easy to resharpen.
