For expert hands

The PRO Fillet 18 cm is part of the EKA Butcher PRO series, professional knives designed for filleting, deboning, and precision work.

The blade is robust yet slightly flexible: it follows the contours of the fish bone and bone, assisting the hand in precision tasks. It is made of Sandvik 12C27 stainless steel, which is distinguished above all by its long-lasting edge retention.

The handle, as on the entire PRO series, is made of Santoprene™, a material approved for food contact and known for a secure grip even with wet or greasy hands.

For larger fillets, the 22 cm version is also available.

Sandvik 12C27 steel

12C27 is the Swedish steel used for the majority of EKA knives, now produced by Alleima (formerly Sandvik Materials Technology). Tempered to 57–59 HRC, it offers a razor-sharp, solid, and corrosion-resistant edge: it is the recommended quality for hunting, utility, and high-end chef's knives.

EKA Warranty: 10 years.
